The formula interface for facet_grid isn’t super flexible, but version 3.0 (2018) introduced an interface option to use rows or cols:

I’d also suggest that the main point of facet_grid is to have shared scales and different variables in rows and columns – forming a grid. If you are only faceting by 1 variable you don’t have a grid, and you want free scales, so facet_wrap seems like a better option:
